Summer Thai Noodle Salad with King Prawns

The talented Wanting Huang (@iswanting) brings you this vibrant summer Thai-inspired noodle salad featuring King Soba Organic Vermicelli Noodles. 

These fine, tender noodles are made from 100% brown rice, making them gluten-free, vegan-friendly, and non-GMO, ideal for those with dietary restrictions or simply seeking a healthier option. They're perfect for a cold noodle dish as they cook in just 3 minutes and boast a delightful bouncy texture.

This version of the recipe is made with king prawns to add protein and accompany the Thai-inspired sweet dressing, but feel free to swap this element with any protein or chunky vegetable of your choice.

With just a handful of fresh ingredients and minimal prep time, this dish bursts with bold flavours! Save this recipe for when you're craving something light, refreshing, and absolutely delicious this summer.

Ingredients:

꩜ Half a pack (125g) of King Soba Organic Vermicelli Noodles
꩜ 9 raw prawns, peeled and deveined
꩜ 1 small shallot, thinly sliced (about 15g)
꩜ A few baby tomatoes, halved
꩜ A small handful of coriander
꩜ Some mint leaves
꩜ Fresh chillies for garnish (optional)

For the dressing:

꩜ 8 tbsp fish sauce
꩜ 3 tbsp palm sugar (or regular sugar)
꩜ Juice of ½ lime
꩜ 1 tsp chilli flakes, or more to taste
꩜ 1 tbsp toasted white sesame seeds
꩜ Water to adjust taste, if needed.

 

Method:

1. Cook the noodles according to the packaging instructions.

2. While the noodles are cooking, prepare the dressing sauce and sear the prawns.

3. Once cooked, rinse the noodles with cold water. Drain and set aside.

4. To plate, arrange the vermicelli noodles, baby tomatoes, shallots, seared prawns, and coriander on a serving dish.

5. Pour the dressing sauce over the noodles mixture and toss to combine everything.

6. Garnish with mint leaves, chilies, and lime wedges. Enjoy!
