10-minute Ramen Recipe: Soba Noodle & Mighty Miso Broth

This recipe is for a super quick and soul-southing miso soup recipe with the must-have addition of King Soba Buckwheat Noodles, adding a delightful texture and nutty flavour to this comforting dish.

The beauty of these King Soba noodles lies in their gluten-free, whole grain composition, offering a nutritious and hearty base that complements the umami-rich broth perfectly.  These noodles are also great in salads and one of the reasons I love King Soba as all their products are organic and non-GMO, as well as tasting amazing!

To achieve the ideal texture and flavour of King Soba noodles, it’s crucial to follow these steps: start by boiling water, then lower the heat to medium before adding the noodles, gently stirring to separate them during the 4-6 minute cook time. Remember to always drain and give them a quick rinse with cold water to halt the cooking process, ensuring your noodles are perfectly tender and ready to soak up the delicious miso broth.

Ingredients:

꩜ 160g King Soba Organic Buckwheat noodles (2 bundles from a 250g packet)

꩜ 2 bok choi (or tatsoi)

꩜ 100g silken tofu, cut into slices

꩜ 2 sachets of King Soba Mighty Miso instant organic soup (I have used Pumpkin and Veg flavour)

꩜ 400ml boiling water

꩜ 2 spring onions, sliced

꩜ Handful black sesame seeds

Method:

1.        Boil a large pan of water, then turn the temperature down to medium, and add the King Soba Organic Buckwheat Noodles.

2.        Gently stir and separate the noodles as they are cooking, and cook for 4-6 minutes.

3.        30 seconds before the noodles are ready, add the bok choi to quickly blanche in the noodle water.

4.        Remove the bok choi, and add 1 each to the base of 2 soup bowls.

5.        When the noodles are ready, drain and rinse them with cold water and set aside.

6.        Now empty the King Soba Mighty Miso sachets into a pot of 400ml of boiling water and stir to combine.

7.        Divide the silken tofu slices and King Soba Organic Buckwheat noodles into the 2 soup bowls along with the bok choi, then pour the hot miso soup over the top.

8.        Top with the spring onions & black sesame seeds and enjoy!
