Sesame noodles with tenderstem broccoli
Broccoli is a cruciferous vegetable, which means it has a high nutritional value. Pair it with delicious sesame seeds and a protein-packed soft-boiled egg for a speedy vegetarian noodle meal.
Simply make a simple soy dressing with honey, vinegar, and ginger while you boil an egg or two for four minutes. Add noodles, remove from the pan after a couple of minutes and allow to stand. Pop the eggs into cold water, drain the noodles and then toss them with some toasted sesame oil. Heat up a wok and stir-fry the tenderstem with a little water for a few minutes. Add sesame oil, garlic, and stir-fry for a couple of minutes before placing the vegetables onto your noodles and adding the dressing, halved eggs and a sprinkling of sesame seeds. Delicious!
Fry an onion in oil for a few minutes before adding Thai curry paste until the fragrance fills the kitchen. Then add half a tin of coconut milk, some chopped mushrooms and some kale. Simmer for several minutes until the vegetables soften. In a separate pan, cook the noodles until they are tender, then add them to the broth. Steam some broccoli until tender and use this to top the broth, along with coriander, spring onion and a squeeze of lime to taste. It's simple, wholesome, and comforting on a cold day.

In a pan, combine rice wine vinegar and a bit of sugar, then bring to a boil for one minute. Remove from heat and set aside to cool. Stir in chopped spring onions, cucumber, fish sauce and some chilli. Cut off the base of your lettuces and separate out the leaves. Add a mound of cooked noodles to each leaf, and top it with carrot, radish, coriander, mint and some cooked prawns. Serve with the dipping sauce on a platter for a simple, sociable dish.
